Ingredients
- 10-12 small eggplants
- 2 tbsp Oil
- tsp ¼Mustard Seeds
- salt to taste
- Few curry leaves

- 1 tbsp coriander seeds
- 5-6 Red chilies
- 1 tbsp chana dal
- 1 tsp urad dal
- 2 tbsp Dry Coconut

Instructions
- Cut up the eggplants into slices.
- Soak the slices in the water.
- Roast all the roasting and grinding ingredients into golden brown color.
- Grind it into a fine powder.
- In a pan, add oil and mustard seeds and when it crackles add the eggplant.
- Add salt, turmeric powder and this spice powder. Mix well and keep the flame medium low.
- Stir in between and let it cook for 10 to 15 minutes.
- Once it gets cooked and roasted switch off the flame.
- Garnish with curry leaves.
- Serve.
