Deep-Fried Tripe Recipe

Ingredients
- bowl of all-purpose flour about ½ pound
- pinch a healthyof cayenne pepper
- a deep-fat fryer or large saucepan full of clean vegetable oil
- 1 pounds ¾cleaned and cooked white honeycomb tripe cut into pieces not dissimilar in size to a prawn cracker

Instructions
- Season the flour with salt, pepper and cayenne for a little piquancy, but not enough to lose its soothing edge.
- Heat the oil up in whatever cooking arrangement you have. When hot, toss the tripe in the seasoned flour, shake off excess in a sieve and slip it into the oil. Deep-fry in batches until golden. Rescue from the oil and tip onto kitchen paper to remove excess oil.
- Serve immediately with pickled onion vinegar for dipping, and chips. Ahhh!
