Some might be a little complicated, some might be incredibly easy, but whatever it is you should try at least once and make it the best thing you’ve made on the last day of the year!
Champagne Cupcakes
As you’d imagine these are filled to the brim with champagne and that’s exactly how every cupcake should be in life. You can either make the cupcakes from scratch or use a mix, which cuts back the amount of time spent. With the premix, add the champagne and then bake. Now onto your frosting; in a bowl beat butter and sugar till smooth, then add the vanilla essence and champagne gradually and you have your frosting all set. Stick it in the fridge to keep cool till your cupcakes are ready.
Strawberries & Champagne Cake Balls
First you need to make the cake and make sure that you add the champagne in at the beginning. It’ll be best to buy the strawberry cake mix, which will also make the whole process so much easier. Bake the cake and then let it cool. Then you can crumble the cake and roll them into balls and set on a tray and keep it the fridge to harden slightly. Melt the white chocolate either in a double boiler or the microwave, then stir in the vegetable oil and mix all together. Take the cake balls out of the fridge and drop it into the melted chocolate to properly coat it, then set it on a tray to cool and harden. Add sprinkles or garnishing of your choice!
Fudgy Champagne Brownies
Melt the chocolate with butter, then add salt, vanilla and 13/4 sugar and mix it all together nicely. Add four eggs one at a time and continue to mix as you do so, and once nicely mixed, add in the flour and combine nicely. Finally add about 3/4 cup champagne (or more if you’re looking for more of a kick) and then mix it all together. Pour it into a baking tray and let it bake for about an hour, give or take depending on your oven. And once done, you should let it sit for a few minutes to cool, cut and serve!
Champagne Mousse
Whip the heavy cream till you have stiff peaks, then stick in the fridge till you’re ready to use it. Mix egg yolks and sugar in a glass bowl and whisk till it lightens, then add the champagne and whisk some more. In a pan, add some water and heat it till it simmers, then place this bowl over the pan and continue to whisk. If it starts to fizz and foam, don’t worry, just keep whisking till the mixture thickens. Once it is thick and has gained volume, take it off the pan and continue to whisk. Make some gelatin and whisk that into the champagne mixture and fold in the whipped cream and you’re set!
Lemon Champagne Cake
Add the lemon cake mix with eggs and champagne and blend till smooth, then pour into the cake tin and bake according to the instructions. While the cake is baking, make the frosting. So whisk butter and sugar, then add in the lemon juice, other extracts and champagne and keep mixing till nice and smooth. And if you want it to be a different colour, add your food colouring. When your cake is ready, just spread it or pipe it along the top and sides and it’s done.
Mimosa Sorbet
It’s probably best to juice your oranges, instead of getting orange juice from the store. Then mix the juice up with champagne and honey and stir till the honey dissolves. Pour the mixture into a container and spread it out evenly, then put it in the freezer for an hour or so. Some say that it’s best to scrape it every so often, but it’s okay if you don’t. Leave it in the freezer overnight and then take it out the next day and let it sit a little before you scoop the sorbet out and serve it.
Champagne Cake
When making the cake, add the champagne in with the egg whites, vegetable oil and vanilla essence. Then mix all the ingredients together and add a little pink food colouring. Pour into the pan and bake for 25-30 minutes, depending on your oven. While it’s baking, work on the frosting or buttercream. Add pink champagne into the mixture and beat it till it’s nice and smooth. Then spread over the cake once both are ready.
Chocolate Champagne Truffles
Melt the chocolate with cream and stir till done, then add champagne and some orange zest. Let it cool, then put it in the fridge for a few hours. From the melted chocolate, scoop small balls and then dip it into powdered sugar. And you’re done!
Champagne Mug Cake
You can use the ingredients from this recipe to make this, just add champagne into the batter before you stick it in the microwave. But of course you can microwave it in a champagne flute as well, but there’s a chance that the glass will not fit in the microwave. So make it in the mug and then transfer it into the flute, and you can top it off with sprinkles or cut fruits to give it more flavour!
