Bulgur Salad Recipe

    Ingredients
    
                
        For the Salad    
                - 1 cup bulgur
- 2 cups Water
- 2 cups torn kale
- 1 apple chopped
- cup ½chopped pecans
- cup ¼dried cranberries
- cup ¼crumbled goat cheese
        For the vinaigrette    
                - Juice of 1 orange
- 3 Tablespoons balsamic vinegar
- 2 Tablespoons olive oil
- 1 teaspoon honey
- 1 teaspoon dry ginger powder
- teaspoon ½salt
- cup ¼chopped fresh parsley

    Instructions
    
                - Add the bulgur to a saucepan with water and bring to a boil.
- Reduce heat, cover, and allow the mixture to simmer for 12-15 minutes or until bulgur is tender.
- Drain off any excess liquid.
- Rinse with cold water.
- Place the vinaigrette ingredients in a jar with a tight lid and shake up until fully combined.
- Toss the bulgur with the kale, apples, pecans, cranberries and goat cheese.
- Pour the vinaigrette over salad and stir to combine.
