Italian Sausage Soup Recipe
Italian sausages are a delight, whether consumed grilled, cooked and served with pasta, or sautéed and served with some grilled veggies or a warm bowl of Italian sausage soup. The Italian soup is a calming and delicious mix of signature Italian flavours and healthy and wholesome ingredients like beef broth, zucchini, northern beans, and Italian sausage, of course!
The soup is filling is as filling as it is healthy. You can tweak the preparation in a number of ways. For example, you can amp up the meat content, the veggies, seasoning, and so on. Follow the recipe below to stir up a big bowl of Italian sausage soup this weekend!

Ingredients
- 1 pound Italian Sausages
- 1 Garlic Clove minced
- 28 ounce canned beef broth
- 14.5 ounce Italian-style stewed tomatoes
- 1 cup sliced carrots
- 14.5 ounce canned great Northern beans
- 2 small zucchini cubed
- 2 cups spinach rinsed and torn
- 1/4 tsp ground black pepper
- 1/4 tsp Salt

Instructions
- In a stockpot or Dutch oven, brown sausage with garlic. Stir in broth, tomatoes and carrots, and season with salt and pepper. Reduce heat, cover, and simmer 15 minutes.
- Stir in beans with liquid and zucchini. Cover, and simmer another 15 minutes, or until zucchini is tender.
- Remove from heat, and add spinach. Replace lid allowing the heat from the soup to cook the spinach leaves. Soup is ready to serve after 5 minutes.
