- Cut the bread into medium sized cubes which should ideally be crouton sized.
- Sprinkle 2 tbsp of olive oil over the bread and rub the oil into the bread. You can add a bit of salt if you prefer.
- At a medium flame, cook the bread until they are crispy and brown. Alternatively, you can bake the bread for 8-10 minutes at 200C. Turn the croutons a few times while cooking.
- Pour the remaining oil over the chicken breast.
- Place a pan over medium heat for one minute and place the chicken into the pan. Cook each side of the chicken for 4 minutes. Check if the chicken is cooked by inserting the tip of a sharp knife into the thickest part of the chicken. The juice of the chicken should be clear with no sign of pink.
- Peel the garlic and crush in a garlic crusher.
- Mash the anchovies and mix with the garlic in a bowl. Add the rest of the dressing ingredients with a handful of grated cheese and mix well. The dressing should have the consistency of yogurt. If thicker, add few drops of water.
- Cut large pieces of lettuce and place in a large bowl. Cut the chicken into medium sized strips and spread half of them over the leaves along with half of the fried bread. Add three-fourth of your dressing to the large bowl and toss well. Add the rest of the chicken and croutons and pour the remaining dressing on top.
- Garnish with some Parmesan and serve
