Jambalaya (On The Bayou) File Gumbo Recipe
A while ago, we shared a recipe for Jambalya, inspired by the song Jambalya (On The Bayou). The song chronicles how the singer is going for a party with his girlfriend and the food that they’re going to have.
He mentioned Jambalya – which you can find for the recipe for here, crawfish pie and file gumbo.
File Gumbo
File Gumbo is a quintessential New Orleans dish, made by adding file powder – made by grinding leaves from the North American sassafras tree – to a bowl of gumbo. Gumbo is a stew made with a strongly flavored stock, meat or shellfish and celery, bell peppers and onions.
Try your hand at this file gumbo for lunch or dinner; serve it with a side of mashed potatoes or over wild rice.

Ingredients
- 1/4 cup + 2 tbsp vegetable oil
- 1/4 cup flour
- 1 medium onion chopped
- 1 medium green bell pepper chopped
- 2 stalks celery chopped
- 2 garlic cloves minced
- 2 cups cooked chicken diced
- 1 pound spicy smoked sausage
- 1 quart chicken broth
- 2-3 tbsp Cajun seasoning
- 1 dash hot pepper sauce
- 3 tbsp gumbo file

Instructions
- Heat the sausage in a large pot until it begins to release oil.
- Combine with the cooked chicken.
- In the 2 tbsp of oil, sauté the onions, bell peppers and celery.
- Add the garlic and toss.
- Combine this mixture with the chicken and sausage.
- Heat the remaining oil in the pot for a few minutes.
- Add the flour and stir until the color of the flour turns brown.
- Pour in the chicken broth and stir to make thin gravy.
- Add the meats and vegetables back to the pot and add the Cajun seasoning.
- Simmer the gumbo for half an hour and remove from the stove.
- Serve over a bowl of rice.
