Make These 10 Delicious & Easy Lunches For the Week Ahead
Sunday is always the best and the worst day of the week. Best, because you’re still away from work and the outside world. Worst, because you need to start planning what comes next in the world of you. Whether it’s food or your wardrobe, you need to start figuring it all out. We have the same problem. So to help you out, we’ve put together a list of continental lunches that you can make at home really fast and keep in the fridge or keep at the ready to take with you to work every day. Granted, some of these can be made in the morning, some need to be made ahead of time, but whatever it is, you can do this and you can be ready for the week ahead.
While this list is mostly continental food, with sandwiches and salads, a list of Indian breakfasts and lunches that you can make is coming soon too!
Monte Cristo Sandwich
All you really need for this sandwich is bread, cheese, butter, eggs and turkey/ham/bacon. Make a triple decker sandwich with the cheese, butter, meat of your choice and seal it with plastic wrap while you make the egg. Beat the eggs and milk into a bowl, then dip your sandwich into this mixture thoroughly and put it onto a pan and cook it. So it’s like a French Toast, but so much better!
Roast Beef & Cheese Roll Ups
When you make your roll up, they may not look like what it does in the picture, but that’s okay. You’ll also need an oven for this one. Mix the cheese, egg, seasoning of your choice and add all of this onto a slice of roast beef and roll it up. And stick the rolls in the oven for 40 minutes or so, add more cheese to the top and once it’s all melted and cooked through, it’s ready to be taken out.
Avocado & Toast
The magic about avocado and toast is that it’s really easy and you can dress it up any way you please. You need to mash the avocado and toast your bread, then spread the avocado over the toast and go nuts with your toppings. Whether it’s egg or bacon or tomato or cheese, you can add whatever you desire.
Chef’s Salad
There is no right way to make the chef’s salad. You can cut whatever vegetables you please, chop them all up and mix together, then add in the dressing and it’s ready to go. Best to make it the morning you’re going to eat it, so that the vegetables are fresh and crisp, as opposed to being soggy and depressing.
Taco Salad
Like the chef’s salad, a taco salad can be mixed with any about of vegetables and meat of your choice. Once your salad is all mixed together, toss in the taco chips and ta da! To keep it fresh, just add the taco chips when you’re about to eat, so that the chips are still crunchy.
Tuna Provencal
Think of it as a tuna salad. Mix the tuna with beets, scallions, parsley, salt and pepper and serve it with lettuce. You can also line your bread with the lettuce and put the tuna over it and close the sandwich. It’s easy and it’s delicious.
Pasta With Whatever You Want
Here’s an easy hack. Boil your pasta and then add anything you desire. Whether you’re trying to finish off some leftovers or you’re trying out some new sauce and you want to give it a go, this is your chance to do it.
Bread, Egg & Cheese
Another easy hack. Bread, egg and cheese are one of the most famous and popular foods on the planet. You can have your eggs any way and you can use whatever cheese you desire and if that’s not enough, you can also add whatever else you want to the sandwich. Again, make this the morning of your meal so that the bread doesn’t get too stale and the eggs don’t start to smell.
Quinoa Salad
If you’re looking for a healthy option, here it is. Quinoa is easy to make. When your water is starting to boil, add in your quinoa and turn off the fire and cover it. While you’re waiting for it to set, mix in all the vegetables and/or meat you want in your salad and once the quinoa is set, add it to the salad and voila, lunch is served.
Pesto Chicken/Paneer Roll
Make your basil pesto and then marinate the chicken in the pesto and cook it. Using roti or tortillas, wrap the chicken up and cut and serve. You can substitute the chicken with paneer and follow the same methods, it’d still work!
