Mashed Potatoes and Cumin Flavored Patties Recipe

Ingredients
- 1 pound russet or red boiling potatoes peeled and boiled
- 1/4 cupAll purpose flour
- 1 cupsemolina
- 2 Green chilies such as serrano seeded and finely chopped
- 1 mediumSpanish onion finely chopped
- 1 teaspoontoasted cumin powder
- 1 teaspoonCayenne Pepper
- 1/2 cupCilantro
- Salt to taste (about 1 teaspoon usually)
- Vegetable oil for frying

Instructions
- In a large mixing bowl mash the potatoes and add all the remaining ingredients. Shape them into small patties, cover and refrigerate for at least 15 minutes. Heat the oil to 350 F. Fry the patties until golden brown and cooked through.
- Serve hot with your favourite chutney.
