Mixed Vegetable Poriyal Recipe

Ingredients
- cups Mixed Vegetables - 2-3 finely chopped or grated
- Onion - 1 finely chopped
- Green chili - 1 finely chopped
- Coconut - ¼ cup grated
- salt to taste
- For Tempering
- Oil - 1 Tbsp
- Mustard seeds - 1/2 tsp
- gram Split black - 1 tsp Urad dal
- Dry Red chili - 1
- leaves Curry- 1 strand
- Asafoetida - a pinch

Instructions
- In a pan, heat some oil. Add the mustard seeds and once they are done spluttering add the dry red chilli, split black gram, asafoetida and curry leaves.
- Add the onions and green chillies and saute for a minute or two.
- Add the chopped vegetables and salt. Cook covered for about 5 minutes sprinkling few drops of water if needed.
- Finally add the fresh grated coconut, mix well with the cooked vegetable and switch off.
