Khandvi Recipe

Khandvi or dahivadi is the Gujarati equivalent of a roll up. The savory snack is mildly spiced and tempered with mustard seeds, coriander and coconut. The end result if a platter stacked with heavenly rolled up snacks.

The Indian snack is fairly easy to find in markets if in the country but is no that difficult to prepare either. All you need is some curd, gram flour and a couple sidekicks. Learn how to make it form the recipe below.

Instructions
  1. Sieve besan and keep in a bowl.
  2. Grind ginger and green chilies.
  3. Make buttermilk with yogurt and half a cup of water.
  4. Mix the besan with ginger-green chili paste, salt, turmeric powder, lemon juice and buttermilk, taking care that no lumps remain.
  5. Cook this mixture, stirring continuously, in a thick-bottomed pan till it becomes a smooth thick batter.
  6. Grease the reverse side of a few thalis or a marble tabletop with a little oil.
  7. Quickly spread thin layers of the mixture over the greased inverted thalis or marble table top while the batter is still hot.
  8. When cool, cut into strips two inches wide and roll them tightly.
  9. Heat two tablespoons of oil and add a pinch of asafetida and mustard seeds.
  10. When they splutter, pour over the pieces.
  11. Serve garnished with scraped coconut and chopped coriander leaves.
