- 1 1/2 cups Raw rice
- 1 cup jaggery
- 1 tbsp Sesame seeds
- 2 pinches dry ginger
- 2 pinches elachi powder
- 1 tbsp ghee
- Oil for deep frying

Instructions
- Soak the rice in warm water for two hours.
- Drain and spread it across a white cotton cloth for half an hour.
- Grind the rice to a rough flour.
- Sieve the rice flour.
- Grind the jaggery into a powder and put the powder into warm water.
- Stir until the jaggery dissolves and then filter the syrup.
- Heat the syrup over a medium flame, stirring occasionally.
- Add water to the boiling syrup, a little at a time.
- Once the water stops dissolving and the syrup begins to thicken, take it off the heat.
- Stir in small amounts of this syrup into the rice flour until the dough becomes gooey.
- Add the sesame seeds, ginger and elachi powder and stir well.
- Place the dough in an airtight container and allow it to sit overnight.
- Shape the dough into lemon sized balls.
- Grease a zip lock bag with a dollop of ghee, place the ball inside it and flatten the dough into a disc.
- Then, drop the discs into hot oil.
- As the dough rises, flip it over and allow it to fry until it turns golden.
- Using a slotted spoon, remove the athirasam from the oil and drain on a paper towel. Serve while warm.
