Amanda’s Thai Peanut

Ingredients
- 1 4 ounce packet of fettuccine
- 1 1/2 cups broccoli chopped
- 1/2 carrot grated
- 2 tsp garlic finely chopped
- 1/2 tsp red pepper flakes
- 1/2 tsp ground ginger
- 1 tbsp brown sugar
- 4 tbsp soy sauce
- 3 1/2 tbsp rice wine vinegar
- 4 tbsp peanut butter

Instructions
- Cook the fettuccine as per instructions on the packet.
- Once it is nearly cooked, add the broccoli and allow it to cook for four minutes.
- Grease a saucepan, and warm the garlic on a high flame in the pan for two minutes.
- Add the red pepper flakes, ginger and brown sugar and sauté for two minutes.
- Stir in the soy sauce, rice wine vinegar and peanut butter to the mixture and whisk until all the ingredients are combined to make a sauce.
- Add the pasta to the sauce and sauté.
- Add the grated carrot and sauté.
- Remove from the pan and serve.
