Anchovy, Little GEM Salad Recipe

Ingredients
- 6 tomatoes the happiest you can find (it is possible to find tomatoes on the vine)
- sea salt and black pepper
- extra virgin olive oil
- a handful of chopped curly parsley
- 16 in good anchovy filletsoil separated but kept whole
- 2 heads of Little Gem lettuce washed and separated, not shredded
- a splash of Vinaigrette

Instructions
- Slice the tomatoes in half lengthwise, sprinkle with salt and pepper and oil, and roast in a medium oven for approximately 20 minutes. This will soften and slightly dry them, intensifying and sweetening their flavor. Allow to cool.
- Mix all the ingredients in a bowl and eat.
