Instructions
  1. Heat Oven to 220 Degrees Celcius.
  2. Mix the sifted flour, baking powder, sugar, and salt in large mixing bowl.
  3. Cut in the butter so that it looks like coarse breadcrumbs
  4. Add the milk and mix it into the flour with fork-but only until the mixture will form a soft ball.
  5. Place the ball of dough on a lightly floured surface and knead it 12 times.
  6. Rub some flour on rolling pin and roll the dough until it's about 1/4 inch thick.
  7. With a large biscuit cutter cut circles, very close together, in the dough.
  8. With a spatula lift HALF of the circles, one at a time onto a cookie sheet and arrange them 1 inch apart.
  9. With a smaller cutter cut a hole in the center of the rest of the circles to make rings and lift out the centers. Keep the centers aside.
  10. Place the rings on top of the circles on the cookie sheet. Place a teaspoon of jam in each ring.
  11. Bake biscuits for 12-15 minutes until golden. Lift the biscuits immediately on to a cooling rack
  12. Bake the centres into little biscuits
