Anne of Green Gables Ruby Tea Biscuits
Make these jam biscuits for a tea party that would be worth of Marilla Cuthbert herself. Afternoon tea is an age old tradition that represents a charming time. Get together with a few friends , some good tea and and some sandwiches and relax away.

Instructions
- Heat Oven to 220 Degrees Celcius.
- Mix the sifted flour, baking powder, sugar, and salt in large mixing bowl.
- Cut in the butter so that it looks like coarse breadcrumbs
- Add the milk and mix it into the flour with fork-but only until the mixture will form a soft ball.
- Place the ball of dough on a lightly floured surface and knead it 12 times.
- Rub some flour on rolling pin and roll the dough until it's about 1/4 inch thick.
- With a large biscuit cutter cut circles, very close together, in the dough.
- With a spatula lift HALF of the circles, one at a time onto a cookie sheet and arrange them 1 inch apart.
- With a smaller cutter cut a hole in the center of the rest of the circles to make rings and lift out the centers. Keep the centers aside.
- Place the rings on top of the circles on the cookie sheet. Place a teaspoon of jam in each ring.
- Bake biscuits for 12-15 minutes until golden. Lift the biscuits immediately on to a cooling rack
- Bake the centres into little biscuits
