Instructions
- Line a baking sheet with foil and preheat the oven to 425 degrees F.
- Clean and cut the chicken into strips.
- In a plate, combine the panko crumbs, lemon zest, thyme, pepper and salt.
- Dip the chicken strips in eggs and panko. Follow these steps for the rest of the pieces too.
- Line the strips on the baking sheet.
- Bake for 10-12 minutes and broil for another couple of minutes for a crisp exterior.
- In another bowl, mix together honey and mustard.
- For the green, toss them in olive oil and lemon juice. Season and serve with the chicken strips.
