  1. Preheat oven to 375 degrees F (190 degrees C).
  2. Place zucchini in a bowl and drizzle the olive oil over zucchini and lightly toss to coat; season with salt.
  3. Spread zucchini onto a baking sheet and top with grated parmesan.
  4. Bake in the preheated oven until lightly browned, about 20 minutes.
  5. Store in an air-tight jar.
