- in Large chicken breasts – 4number
- 1 white onion chopped
- ½ red pepper chopped
- ½ green pepper chopped
- 4 mushrooms sliced lengthwise
- 1 tablespoon olive oil
- 4 teaspoons Cajun seasoning
- 4 tablespoons butter
- cup ½shredded pepper jack cheese

Instructions
- Pound the chicken using a meat tenderizer until ½ inch thick. Pre-heat the oven to 400 degrees.
- In a large skillet, heat olive oil on medium heat. Saute the vegetables for 5 minutes or until half cooked.
- Place some chicken at the centre of each breast and spoon a large portion of the sautéed vegetables on top. Top it with more cheese.
- Roll the chicken tightly nd secure with toothpicks. Season generously with Cajun seasoning and add a knob of butter on each breast.
- Bake in the oven until the chicken is completely cooked through. Slice the chicken in half and serve hot.
