Cheese Straw Recipe

Ingredients
- 8 ounces grated extra-sharp cheddar cheese 2 packed cups
- 1-1/2 cups all purpose flour
- 1 teaspoon kosher salt
- teaspoon Scantcrushed red pepper flakes
- 1-1/2 tablespoons roughly chopped fresh herbs
- 1 stick cold unsalted butter 1/2 cup
- 6 tablespoons heavy cream

Instructions
- Preheat the oven to 400°F. Line two baking sheets with butter or parchment.
- In the bowl of a food processor, combine the cheese, herbs,flour, salt, flour and red pepper flakes. Mix until the mixture looks like coarse crumbs.
- Cut the butter into 6 cm chunks into the mixture. Mix until mixture looks like bread crumbs with a few pea-sized butter crumbs. Add Heavy cream and pulse again.
- Dump the dough on a floured surface.
- Use your hands and flour as needed to bring the dough to form a 1/2 inch thick rectangle. Slice in half.
- Roll each block of dough into a 8 x 10-inch rectangle about 1/8-inch thick.
- Cut the dough into thin strips.
- Transfer to the baking sheet with sufficient spacing between the strips.
- Bake for 10-12 minutes.
- Set on a wire-rack to cool and serve with your favourite dipping sauce.
