Classic Turkey Gravy Recipe

Ingredients
- 2 tablespoons unsalted butter
- 1 medium onion or leek or 2 shallots, sliced
- Neck and giblets from your turkey discard the liver
- 8 cups low sodium chicken broth
- 3 sprigs thyme parsley, rosemary and/or sage
- 1 Bay Leaf

Instructions
- As soon as you put your turkey in the over, you can start working on the broth.
- Place a large saucepan over medium-low hear.
- Now melt the butter in the pan
- Once, the butter is heated, add onion and turkey neck and giblets.
- Stir and saute until they turn brown.
- Now, add the chicken broth, herb sprigs and bay leaf.
- Now cover and let it simmer while the turkey roasts for about 2 hours.
- Strain this and keep it warm. You can remove the neck and giblets if you want.
- Once, your turkey has been cooked, place it on a cutting board. Take the pan drippings and place into a degreasing cup.
- Now take about a half cup of the broth and pour into a roasting pan and scrap the brown bits with wooden spoon.
- Add this to the degreasing cup.
- Let the fat rise up to the top of the cup, then take a spoon and remove 1/2 cup fat and transfer it to a large saucepan over medium heat.
- Now, sprinkle the flour into the pan and cook. Make sure to stir constantly with a wooden spoon.
- Now slowly, add the hot broth while whisking constantly to remove lumps. Bring this to a boil and then reduce the flame to media low.
- Pour the dark juices from the cup into the gravy and throw away the remaining fat.
- . Simmer, whisking occasionally, until the gravy thickens, about 10 minutes. Add the Worcestershire sauce and season with salt and pepper. Stir in the flavored butter, if desired.
