Disco Chicken Recipe
Not much needs to be said about a dish that has ‘disco’ in its name, but allow us to divulge the description of this awesomeness that is the disco chicken. Commonly also known as maple rum chicken, the preparation packs a delicious punch of flavours from ingredients like spiced rum, maple syrup, dark soy sauce, and more. The juicy chicken pieces are cooked in this palatable blend of ingredients and served with a light sprinkle of sesame seeds and freshly ground pepper.
But why is it called ‘disco chicken’? Well, the reasons vary across different kitchen but according to one website, the dish derives the name from its glazed sesame-sprinkled appearance, which reminds some of a disco ball. So grab your chef whites and get ready to whip up a delicious disco chicken this weekend!
P.S. You can use this same recipe to make some maple rum glazed chicken wings as well. Just switch the chicken thighs for chicken wings!

- 4 chicken thighs
- 1/2 cup maple syrup
- 1/2 cup spiced rum
- 1/4 cup dark soy sauce
- 1/2 tsp chili-garlic sauce
- 1/2 tsp minced ginger
- 1/4 tsp cumin
- 2 garlic cloves minced
- 2 tbsp Lemon juice
- 1/2 tbsp hot water
- 1/2 tbsp corn starch
- 1/2 red onion sliced
- Fresh ground pepper to taste
- Sesame seeds for sprinkling

- Combine the maple syrup, spiced rum, dark soy sauce, chili garlic sauce, minced ginger, cumin, minced garlic, and lemon juice in a bowl to make the sauce. Toss the chicken in this sauce sauce.
- Preheat the oven to 400 degrees.
- Layer the sliced onions along the bottom of the pan and lay the chicken over the onions skin side down.
- Add the dissolved cornstarch to the sauce, stir well and pour over the chicken.
- Sprinkle the chicken with fresh ground black pepper and sesame seeds and cook for 30 minutes.
- Turn the chicken skin side up, glaze with the sauce in the pan and sprinkle with black pepper and sesame seeds, and cook for another 30 minutes.
- Serve hot with steamed rice or salad.
