Easter’s Blueberry Cream Cheese Cake Recipe

Ingredients
For the cake
- 1/4 cup butter softened, 4 Tbs
- 2/3 cup sugar
- 1 egg
- 1 cup plus 2 Tablespoons flour divided
- 1/2 teaspoon baking powder
- 1/4 teaspoon Salt
- 1/2 cup Milk
- 1 cup fresh or frozen blueberries
- 3 oz cold cream cheese cut into small cubes

Instructions
- Preheat oven to 375. Grease an 8 inch baking pan.
- Combine 1 cup of flour, baking powder and salt in a bowl.
- In another mixing bowl, cream butter and sugar on medium speed until fluffy.
- Beat in egg.
- Gradually add the flour mixture to the butter mixture, alternating with the milk, starting and ending with the flour mixture.
- Toss blueberries with remaining 2 Tbsp flour.
- Fold in blueberries and cream cheese blocks into the batter and pour into the pan.
- In a small bowl, combine flour and sugar.
- Cut in butter until crumbly, with your fingers or a fork.
- Sprinkle over batter and bake for about 40 – 45 minutes.
- Top with fresh blueberries or blueberry jam to serve warm.
