Ingredients
- 1 1/2 cups all purpose flour
- 2 teaspoons baking powder
- 1/4 teaspoon Salt
- 1 cup plain yogurt
- 1 cup sugar
- 3 large eggs
- 1 tbsp zest of one orange
- 5 tbsp juice of an orange
- 1 tsp of vanilla essence
- 1/2 cup butter melted
- 1 cup + 1/4 fresh cranberries
- 1/4 cup walnuts chopped

Instructions
- Preheat oven to 325, grease the bottom of 8 inch loaf pan and add a piece of parchment, enough so that it sticks out over the sides of the pan.
- Combine the flour, baking powder and salt, set aside. In another bowl, combine yogurt, eggs, sugar, orange zest, butter, orange juice and vanilla.
- Add in the 1 cup of cranberries, combine, pour batter into the pan- do not over stir. Add the extra cranberries and the chopped walnuts on top of loaf.
- Bake for 45-55 minutes until that heavenly smell creeps out of the oven and wafts through the house (may take longer depending on pan or oven so keep an eye on it). Remove from pan and slice it when it's cool or just work your way through it with your hands- option two works for me.
