Ingredients
- Lamb chops 4
- Potatoes thinly sliced with skin4 medium
- Tomatoes thinly sliced4 large
- Brinjal thinly sliced1
- Garlic chopped2 teaspoons
- Fresh oregano chopped2 tablespoons
- Black olives pitted and halved12-16
- Mustard paste 2 teaspoons
- tablespoons Olive oil 5+ for drizzling
- salt to taste
- Crushed black peppercorns to taste
- Feta cheese crumbled100 grams

Instructions
- Preheat the oven to 200° C.
- Layer half the potato, tomato and brinjal in a baking dish. Top with half the garlic, oregano, olives and mustard paste. Drizzle five tablespoons of olive oil on top and sprinkle salt and crushed peppercorns on top.
- Sprinkle the feta cheese on top and repeat the layers with the remaining ingredients.
- Place the baking dish in the preheated oven and bake for twenty to twenty-five minutes.
- Place the lamb chops on top, drizzle little more olive oil on top and sprinkle little more salt and crushed peppercorns on top. Bake for another fifteen to twenty minutes or till the lamb is tender.
- Remove from heat and allow to rest for a while. Serve hot.
