Hong Kong Fried Rice Recipe
The food in Hong Kong resonates a lot with the food available in South East Asia as a whole – it is high on flavorsome sauces, has a heady gastronomic edge to it, and in other words is sheer delight. Especially the hawker-style dishes in the country are palate pleasers. One such delicious preparation is the Hong Kong fried rice, which is simply a blend of cooked (steamed or boiled) rice, your choice of meats and vegetables, and sauces tossed in vegetable oil. The dish is as delectable as it is easy to make. So give your leftover rice a makeover with this Hong Kong style non vegetarian fried rice tonight!

Ingredients
- 1 carrot,diced
- 100 gram cooked ham
- 1/3 cup frozen peas
- 2 beaten eggs
- 3 cups cooked long grain rice
- 1 tbsp vegetable oil
- 1/2 onion, diced
- 150 gram Prawns de-shelled and deveined
- 3 tbsp ketchup
- 1 tsp Salt

Instructions
- Bring a small saucepan of water to a boil, add the carrot, and blanch for 2 minutes. Drain and rinse under cold running water. Transfer to a bowl, and then add the ham and peas.
- Mix the eggs with the cooked rice in a large bowl.
- Heat the oil in a wok or large frying pan over medium-high heat, add the onion, and stir-fry for 5–7 minutes until softened.
- Add the prawns and stir-fry for about 2 minutes until just cooked.
- Now put in the rice-and-egg mixture, salt, and ketchup and stir-fry for 3–4 minutes until the eggs and shrimp are cooked.
- Finally add the ham and vegetables and toss thoroughly for another 2 minutes.
- Transfer to individual bowls or a serving plate, then serve.
