- 2 Zucchini cut lengthwise
- 1 red bell pepper thinly sliced
- 2 cups fresh baby spinach leaves
- 1 Onion thinly sliced
- cup ¼fresh mint leaves
- 1/3 cup toasted pine nuts
- 1 cup hummus
- salt to taste
- pepper to taste
- 2 teaspoons olive oil
- 4 ready to eat wheat wraps

Method
- Brush the zucchini with olive oil, sprinkle salt and pepper and grill it in a pre heated oven or in a grill pan till slightly browned.
- Spread hummus on the wheat wrap, place one or two zucchini pieces sprinkle salt and pepper.
- Place onions, bell peppers, baby spinach and mint leaves and wrap it all tightly together.
- Cut them in half and pack it for lunch!
