Kashmiri Rogan Josh Recipe
An aromatic lamb dish of Persian origin, Rogan Josh is one of the signature recipes of Kashmiri cuisine. An authentic Kashmiri recipe, Rogan Josh is prepared without using onion, garlic or tomato.

Ingredients
- 1/2 kg of Lamb
- 5 tbsp of ghee
- 2 tbsp of Lemon juice
- 2 tbsp of garam masala
- 2 bay leaves
- 3 cm cinnamon sticks
- 2 pods of black cardamom crushed
- 4 pods of green cardamom crushed
- 1/2 tbso of Asafoetida
- 1 cup of plain yoghurt
- 3 tbsp of Kashmiri chilli powder
- 1 tbsp of green cardamom powder
- 1/2 tbsp of Black Cardamom Powder
- 1 tbsp of Fennel seed powder
- 1 tbsp of dry ginger powder
- 1 tbsp of black pepper powder

Instructions
- To the meat in a bowl, add lemon juice and salt. Marinate it for 2 hours.
- Take curd in a bowl and whisk till it is smooth. Add the Kashmiri Chilli Powder, Green Cardamom Powder, Black Cardamom Powder, Fennel Seed Powder, Dry Ginger Powder and Black Pepper Powder to it and mix it well.
- Heat the ghee in a pan, and add Bay Leaf, Cinnamon, Black Cardamom, Green Cardamom and Asafoetida. Saute it well for a minute.
- To the above, add the mutton and fry it till turn golden brown. After it is fried well, add the curd and allow it cook for 10 minutes.
- Now, add sufficient amount of water and close the pan. Allow it to simmer for 2 hours. Once the mutton becomes tender, turn off the heat.
