Ingredients
- 1 cup Rice
- ¼ cup urad dal
- ½ cup Sour Yogurt
- ½ inch Ginger chopped
- 1 green chili chopped
- 3 tbsp Water
- ½ tsp Oil
- 1 tsp baking soda
- 1 tsp Oil
- ½ tsp rock salt
- black pepper as required
- red chili powder as required
- roasted sesame seeds as required

Instructions
- Rinse the rice and urad dal.
- Soak them in separate bowls of water for four hours.
- Drain both the rice and dal and add them, and the ginger and green chili to a grinder.
- Grind the mixture together. At an interval, add the water.
- Once the batter becomes thick and slightly grainy, put it in a deep bowl.
- Add the yogurt and salt and stir well.
- Cover the batter and leave it ferment overnight.
- The next day, grease a pan with the oil.
- Add some water to a steamer and allow it to come to a boil.
- Add a little oil to the batter and then quickly stir in the baking soda.
- Then, pour the batter into the oiled pan and add the black pepper powder, red chili powder and sesame seeds.
- Stir the powders in.
- Place the pan with the batter over the boiling water and cover it.
- Allow it to steam for twenty minutes.
- Once the dhoklas reach the right texture (you should be able to insert a tooth pick in them and remove it with no batter clinging to it), remove the dhokla from the steamer.
- Slice and serve with chutney.
