Legendary Cherry Bread Recipe

Ingredients
- 1 3/4 Cups All purpose flour
- 1 cup sugar
- 2 Large Eggs
- 2 tsp baking powder
- pinch of Salt
- 1/2 cup Oil
- 1 tsp vanilla extract
- 1 10- ounce jar maraschino cherries
- Cream Cheese icing

Instructions
- Preheat your oven to 350, grease 2 loaf pans and set aside.
- Drain cherries, reserving the juice.
- Give them a rough chop and coat them in about 2 tsp flour.Toss to combine.
- Combine flour, baking powder, sugar, and salt in a large bowl and stir together.
- In another bowl add eggs, vanilla extract, oil, and cherry juice (reserve about 2 tsp of the juice for icing) and mix well.
- Combine wet and dry ingredients in a mixing bowl and mix well. Your batter will be thick, and it’s supposed to be, just make sure you don’t over-mix it!
- Fold cherries into batter and mix.
- Pour batter into greased loaf pans, bake at 350 for around 40 minutes. Check after 30.
- Add reserved cherry juice to a cream cheese icing and melt.
- Pour your icing over cake (after it has cooled) and serve!
