Ingredients
- 2 tbsp butter
- 1 small onion chopped
- 1 stalk celery chopped
- 1 carrot chopped
- 2 potatoes cubed
- 1 butternut squash peeled, seeded and cubed
- 4 cups chicken stock
- salt and pepper to taste

Instructions
- Sauté the onion celery, carrots, potatoes and squash in the butter for five minutes.
- Add the stock until it covers the vegetables. Stir, and allow to come to a boil.
- Reduce the heat to simmer and allow to cook for 40 minutes.
- Take off the stove and allow the soup to cool.
- Blend soup in a blender until smooth.
- Stir in the chicken stock until it’s a consistency you like.
- Serve and enjoy.
