Pork Fajita Recipe
Mexican cuisine is popular for the mouth-watering spices, cheese, and of course all the corn (cooked, ground, baked, and otherwise). One such popular Tex-Mex item that combines all of the aforementioned is fajita. The fajita is essentially grilled meat served in – or on – a warm flour/corn tortilla. The dish can be tweaked to suit everyone spice level meat preference and even vegetable choice.
The recipe is extremely simple to make and the end result worth a million dollars. Garnish the final dish with all the vegetables, lettuce, and cheese that you like and voila, you’ve got yourself a sumptuous Mexican meal! Follow these easy-peasy steps to whip up a delicious pork fajita!

Ingredients
- 2 tbsp olive oil
- 500 g pork tenderloin julienned
- 1 red bell pepper thinly sliced
- 1 green bell pepper thinly sliced
- 1 small Onion thinly sliced
- 3 cloves garlic minced
- 1 tsp ground cumin
- 2 tsp fajita seasoning mix
- Juice of 1 lime
- 8 ”-6” flour tortillas warmed
- Salt & Pepper to Taste

Instructions
- Heat the oil in a large skillet over high heat.
- Add pork, sprinkle with the salt and pepper.
- Cook, and stir constantly for about 2 minutes.
- Add peppers, onion, garlic, cumin and fajita seasoning and continue to cook till the vegetables are crisp-tender, about 3-4 minutes.
- Stir in the lime juice, and sauté for about 2 more minutes.
- To serve, roll ¾ cup meat mixture in each tortilla and garnish with desired veggies and sauces.
- Serve hot!
