Instructions
- Heat 1 tablespoon of oil in a pan or kadai. When the oil is hot enough, add chopped onion, green chili, ginger, and saute for a few minutes till onion turns translucent.
- Add salt and saute again for a few more minutes in low flame until it shrinks. Turn off the flame and allow it to cool.
- Add ragi flour and salt in a bowl. Mix well. Add the onion mixture to the ragi flour and mix well.
- Add water little by little and knead it to a soft dough.
- Divide the dough into equal sized balls. Keep aside covered.
- Heat a tawa or a griddle in low flame. Grease it with oil.
- Carefully, place the ball on the hot tawa and flatten it. You can also spread a little oil on a plastic sheet or butter paper, flatten the ball in circular shape, and then place it gently on the tawa.
- Add oil along the sides of the roti, cover with a lid, and cook it in medium flame.
- When one side is cooked well, flip it to the other side and cook on that side too. Flip and cook them on both the sides till adai gets cooked well. Transfer it to a serving plate.
- Before making the next adai, make sure to reduce the flame to low, grease the tawa and then add the next ball, and repeat the same procedure.
- Healthy and delicious adai is ready to be served with chutney.
