Roti is a signature Indian bread made by roasting rolled out kneaded dough on a pan and fire. Another Indian staple is ragi, a.k.a. finger millet, which is consumed widely in South India, especially Karnataka. Combine these two staples and you get the delicious ragi roti.

Instructions
  1. Add salt and water to a bowl and mix.
  2. Add flour to a bowl, pour water as needed and make mix with a spoon to make a soft dough.
  3. Sprinkle flour on the rolling area, make equal sized balls and place a ball on the rolling area. Pat the ball, gently with fingers to spread the dough evenly and make a medium sized roti.
  4. Heat a tawa and place a roti over it.
  5. Wet a cloth and squeeze off excess water. Dampen the roti with the moist cloth.
  6. Flip it when it is cooked. If needed cover and cook to keep them soft.
  7. Stack and keep covered until served.
