Santula Recipe
Let’s take a culinary trip down the lanes of Odisha with a classic Oriya dish called the Santula, a fried (bhaja santula) or boiled (sijha santula) vegetable curry dish from the east Indian state. The preparation uses a number of vegetables including raw papaya, potato, tomato, and brinjal, making it as healthy as it is delicious. Additionally, santula is known as an easily digestible curry – especially for people suffering from stomach disorders – as it is low on spices and high on greens.
The recipe below describe the method of making a pressure-cooked santula wherein boiled and pressure cooked vegetables are lightly sautéed with mild spices and milk. Follow the instructions below to enjoy some of this delectable Oriya dish tonight!

- 250 gram potatoes chopped
- 100 gram raw papaya chopped
- 3 brinjals halved
- 1 tbsp Turmeric powder
- 1/2 tbsp coriander powder
- 2 tbsp refined oil
- 1 onion sliced
- 2 garlic cloves
- 1/2 tbsp Mustard seeds
- 1 cup Milk
- 1/2 tsp Asafetida
- 2 whole green chillies
- 1 inch ” ginger piece
- water as required
- salt to taste

- In a pressure cooker add cut potatoes, raw papaya, brinjals and a little bit of water.
- Add turmeric powder, salt, ginger and cumin to the potatoes, papaya and brinjals.
- In a pan, saute sliced onions, mustard and cumin seeds.
- Add chopped ginger, garlic, turmeric, coriander powder, asafoetida, salt and water.
- Transfer the potatoes, raw papaya and brinjal to the pan.
- Add some milk to it and garnish with some coriander and whole green chillies.
- Simmer for 5-7 minutes and serve.
