Ingredients
- 3 cups Dosa Batter
- 5 medium potatoes boiled in salter water
- 1 large thinly sliced onion
- 1/2 tsp Mustard seeds
- 1/2 tsp Cumin seeds
- 1 tsp chana dal
- 1/2 tsp urad dal
- 1 pinch Hing
- 10 Curry Leaves
- 1 chopped green chilli
- 2 tbsp halved cashew nuts
- 1 pinch Turmeric powder
- 2 tbsp Oil
- 1/3 Water
- salt to taste
- 3 tbsp finely chopped coriander
- 3 tbsp Oil for making dosas

Instructions
- Dice the potatoes in small pieces.
- Heat oil in a wok and add mustard seeds.
- Once the seeds start crackling, add hing, urad dal, chana dal and cumin seeds.
- Saute this mixture till the lentils are lightly toasted and at this point at curry leaves, green chillies and cashew nuts.
- Cook for two minutes and then mix in the onion.
- Once the onion starts to become translucent add the salt along with the turmeric and mix well.
- Cook for a minute and then add the water and let it come to a boil.
- At this point add the potatoes and mix them in and mash up slightly.
- Cook the potatoes for 5 minutes and at the end mix in the coriander leaves and keep the stuffing aside.
- Now begin making dosas on a non-stick pan and once it is almost ready, put the masala in the middle and fold the dosa in half.
- Serve the dosa hot and crispy.
