Sweet Potato Salad

Ingredients
- 1/2 kg Sweet potatoes boiled, peeled and chopped into large pieces.
- 1 tbsp olive oil
- 1/2 a red onion finely chopped
- 4 Spring onions sliced lengthwise
- A handful of chives sliced
- 5 tbsp sherry vinegar
- 2 tbsp olive oil
- 2 tbsp honey

Instructions
For the sweet potatoes
- Preheat oven to 200 degrees Celsius.
- Toss chopped sweet potato in 1 tbsp olive oil.
- Spread the potato chunks on a baking tray lined with a baking sheet.
- Roast for 30 - 35 minutes until golden.
- Allow to cool.
For the dressing
- Using a hand held whisk, gently whisk together the onion, spring onions, chives, sherry vinegar, olive oil and honey.
- Mix the cooled sweet potatoes and dressing together using your hands.
- Serve!
