Thai Black Rice Pudding

Ingredients
- 1 cup black rice
- 1/2 cup sugar
- 1 can coconut milk well stirred
- 1/4 tsp Salt
- 3 cups Water

Instructions
- Add the salt and rice to the water and boil it in a heavy saucepan.
- Once it begins to boil, turn it down to simmer and allow it cook for 45 minutes.
- After 45 minutes, remove the lid and add the sugar and coconut milk.
- Allow the pudding to boil and then reduce the heat again and simmer for half an hour.
- Stir occasionally.
- After 30 minutes, remove the pudding of the stove, allow it to cool and serve.
