Thai Fried Rice (Khao Pad) Recipe
There are not enough words to describe just how amazing fried rice as a preparation is. It’s delicious, it’s sumptuous, it is easy to make and can be made in a number of ways. You could start from scratch or you could even give last night’s leftover rice a palatable makeover. And the wondrous preparation isn’t limited to just one cuisine, various chefs and kitchens have their unique take on fried rice. One such recipe being Khao Pad, a.k.a. Thai fried rice.
The Khao Pad takes not more than a few minutes to make and the final result will have you making this dish again and again. Tethered to the very anchor of Thai cooking, that is, mild spices and flavoursome sauce, this rice dish is just the comfort food you need after a long day at work.

- 2 cups cooked jasmine rice
- 1/2 small Onion chopped
- 4 green onions chopped
- 2-3 garlic cloves chopped
- ; 2 eggs
- 1 tbsp fish sauce
- 1 tbsp thin soy sauce
- Juice from half a lime
- Dash of ground white pepper

- Sauté the onion and garlic in canola oil over medium heat until just translucent.
- In the same pan, add a little more oil and once it’s hot, add the eggs. Scramble until they are done and then mix in the rice.
- Add the green onions. Taste and adjust seasonings as appropriate.
- Remove from heat and serve with extra lime slices and nam phrik (Thai chili sauce).
While you can make this recipe with freshly made jasmine rice, the Khao Pad tastes even better with Jasmine rice that has been cooked and left out for a few hours.
