Thai Ramen Chopped Salad
This ramen salad combines a variety of ingredients to create a healthy, colourful salad with a delicious dressing. It would be the perfect starter to a Thai or oriental meal, or could even be a meal in itself!

- 2 packages chicken flavoured ramen noodles
- 8 ounces chicken breasts shredded
- 2 cans mandarin oranges drained with juices reserved
- 1 red pepper chopped into cubes
- 2 carrots shredded
- 1/2 head romaine lettuce chopped
- 1 can pitted black olives drained with juices reserved
- 3 green onions chopped
- 1 1/2 cup salted peanuts
- 1 tsp dry mustard
- 2 tsp Sesame oil
- 1 package egg roll wraps

- 2 packages chicken flavoured ramen noodles
- 8 ounces chicken breasts, shredded
- 2 cans mandarin oranges, drained with juices reserved
- 1 red pepper, chopped into cubes
- 2 carrots, shredded
- 1/2 head romaine lettuce, chopped
- 1 can pitted black olives, drained with juices reserved
- 3 green onions, chopped
- 1 1/2 cup salted peanuts
- 1 tsp dry mustard
- 2 tsp sesame oil
- 1 package egg roll wraps
- Cook the ramen noodles, using only one packet of seasoning.
- Drain and place the noodles in a salad bowl.
- Combine the chicken breasts, carrots, half of the red peppers, the green onions and the romaine lettuce together.
- Slice the olives into rings and add them to the combined salad.
- Add half of the mandarin oranges to the salad and toss.
- In a food processer, blend the remaining mandarin oranges and juice, the chicken flavour packet, the peanuts, the red pepper, the mustard and the sesame oil together.
- Use this mixture as a salad dressing.
- Serve!
