Gujarat takes its food rather seriously, as is evident from their gigantic selection of farsaan (snacks). When sipping tea in Gujarat or with a Gujarati, prepare yourself for an elaborate snacking menu, which your taste buds will savor for ages.

Thepla too are an inherent part of this widely sing farsaan saga. The snack is a soft roti-like bread but spicier and a tad thicker. It involves the inherent wheat flour but with added chili powder, turmeric fennel seeds and asafetida. Follow this recipe to make some.

Instructions
  1. Combine all the ingredients in a bowl and knead into a semi-soft dough using water.
  2. Knead the dough well using a little oil. Cover and keep aside for 10 minutes.
  3. Divide the dough into 14 equal portions and roll out each portion into a 125 mm (5") diameter circle sprinkling some whole-wheat flour.
  4. Heat a non-stick tava and cook each circle, using a little oil, till it turns golden brown on both sides.
  5. Serve hot with pickle.
