Tilapia in Thai Sauce

    Ingredients
    
                - 4 tilapia fillets
 - 2 tbsp corn flour
 - 2 tbsp Sunflower Oil
 - 4 Spring onions sliced
 - 2 garlic cloves crushed
 - 1/2 inch Ginger finely chopped
 - 2 tbsp soy sauce
 - 1 tbsp brown sugar
 - 1 lime juice
 - 1 Red chilli deseeded and sliced
 - Thai basil leaves

    Instructions
    
                - Toss the fillets in the corn flour.
 - Heat the oil and fry the fillets for three minutes on each side.
 - Remove the fillets from the pan, fry the spring onion, garlic and ginger for a minute.
 - Add the soy sauce, sugar and lime juice.
 - Turn the heat down to simmer until the mixture reduces into a syrup.
 - Pour this sauce over the fish and sprinkle the chili and a few Thai basil leaves over it.
 - Serve with lime wedges.
