Vegan Oatmeal Muffins Recipe

Ingredients
- 2 cups rolled oats
- 2 2 cups juice or 2cold tea
- 1 cup applesauce or 1pumpkin puree or 2 smooshed bananas any fruit pulp
- 1 teaspoon ⁄2salt
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 2 cups flour

Instructions
- Preheat your oven to about 400 degree Farenheit
- In a bowl, add your oatmeal with the liquid (juice or tea) and let it soak for about 10 to 15 minutes.
- Now, add the fruit pulp. Mix well
- Now, add the salt, soda and baking powder. Mix.
- Now, add the flour and mix till the mixture blends well. Do not over stir
- Pour into your muffin tray and place in oven.
- Bake until they are lighr brown and done.
- To check if done, insert a toothpick into the center of the muffind and it should come out clean.
- This will take about 15 minutes.
