Vegan Peanut Butter Cookie Recipe

Ingredients
- 1 cup flax egg 1/3water + 1 tsp flax seeds
- 1/2 cup vegan butter chilled, Earth Balance
- 1/2 cup creamy peanut butter organic/salted
- 1 cup vegan sugar crystals Florida Crystals or "raw" sugar both work well
- 1 tsp vanilla extract
- 1/2 tsp cinnamon
- 1/4 tsp pumpkin pie spice optional
- 1 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp Salt
- 1 cup white flour organic/unbleached (Bob's Red Mill used)
- 1/2 tsp apple cider vinegar or lemon juice
- cup for rolling dough balls: 1/2coarse sugar crystals

Instructions
- Preheat oven to 350 degrees.
- Whisk together and set aside flax "egg".
- In a large mixing bowl, beat together until smooth vegan butter, peanut butter, sugar crystals, vanilla extract and cinnamon + optional pumpkin pie spice.
- Beat in, flax "egg", baking powder, baking soda, salt and white flour.
- Lastly add, apple cider vinegar or lemon juice.
- Roll dough into balls and dip into sugar. Place on baking sheet.
- Bake at 350 degrees for 12-14 minutes. Cool.
