Vegetable Hong Kong Style with Steamed Rice Recipe

Ingredients
- 1 1/2 cups steamed chinese rice
- 2 1/4 cups parboiled mixed vegetable cubes
- 1 capsicum cut into big pieces
- 2 tsp Ginger finely chopped
- 1 tsp garlic finely chopped
- 3 whole dry kashmiri red chillies broken into pieces
- 2 tbsp soy sauce
- 4 tsp Vinegar
- 2 tsp chilli sauce
- 1 1/2 cups clear vegetable stock or water
- 2 tbsp Cornflour
- pinch aof sugar
- 2 tbsp Oil
- salt and freshly ground black pepper powder to taste

Instructions
- Heat the oil in a wok or frying pan on a high flame. Add the vegetables, ginger, garlic, red chillies and stir fry over a high flame for 2 minutes.
- Add the soya sauce, vinegar, chilli sauce, salt and pepper.
- Mix the stock and cornflour, add to the mixture and cook for 1 minute. Add the sugar.
- Top with the steamed rice and serve hot.
