White Chocolate Lime Mousse Recipe

- 100 g white chocolate
- 300 ml double cream
- zest of 1 lime plus extra to garnish
- 3 large free-range eggs whites only
- 50 g caster sugar
- 150 g raspberries
- 3 leaves mint sprigs torn or finely shredded

Instructions
- Break the chocolate into small pieces and place in a heatproof bowl.
- Place half the cream in a small saucepan and heat until it begins to boil. Pour it immediately over the chocolate and stir until the mixture is smooth. Place the lime zest and the rest of the cream into another bowl and whisk until it forms soft peaks. Fold this mixture into the melted chocolate. Set aside.
- In a separate bowl, whisk the egg whites until they form soft peaks. Whisk in the sugar a tablespoon at a time, and continue whisking until the mixture is shiny, smooth and has stiff peaks that hold their shape. Carefully fold it into the chocolate mixture.
- Set some raspberries aside for garnish, place the rest together with the mint into 4 × 200ml glasses or a 1 litre serving bowl. Crush the fruit lightly with a fork. Spoon the chocolate mousse over the raspberries, garnish with a few extra fresh raspberries and sprinkle with grated white chocolate and lime zest and chill for at least 2 hours, or overnight if you have the time.

THE SECRET TO PERFECTLY WHISKED EGG WHITES:
To whisk egg whites you need a spotlessly clean bowl and beaters. Any grease will stop the whites from forming peaks.
