Wonder Woman’s Ambrosia Salad

As Wonder Woman hit theaters this week with a bang, try out this recipe for her Ambrosia salad to get you charged up with her super powers!

A delicious Spinach, Pumpkin and Chickpea Salad with Ambrosia Tahini Dressing.

Ingredients
- 1 cup baby spinach leaves
- 1 cup chopped pumpkin
- 1/2 cup cooked chickpeas
- 1/4 cup Sliced red Onion
Ambrosia Dressing
- 4 Tablespoons tahini Sesame paste
- 1 Teaspoon smoked paprika
- 1 Teaspoon lime juice
- 1 Pinch saffron strands
- 1/2 Teaspoon Salt
- 1/4 Teaspoon pepper
- 2 Teaspoon extra virgin olive oil

Instructions
- Blanch the Spinach leaves in Boiling water for one minute and drain
- Roast the Chopped pumpkin on a stove grill or the oven until golden on the outside and soft in the middle. Small dice of pumpkin should roast evenly in about 15-20 minutes
- Mix together the Spinach, Pumpkin, Chickpeas and Onions
- Mix together all the ingredients for the dressing to for a smooth consistency. Add the dressing to the salad just before serving
