Instructions
  1. Blanch the Spinach leaves in Boiling water for one minute and drain
  2. Roast the Chopped pumpkin on a stove grill or the oven until golden on the outside and soft in the middle. Small dice of pumpkin should roast evenly in about 15-20 minutes
  3. Mix together the Spinach, Pumpkin, Chickpeas and Onions
  4. Mix together all the ingredients for the dressing to for a smooth consistency. Add the dressing to the salad just before serving
