Ingredients
- 3 hard-boiled eggs
- 2 tbsp Oil
- 1 cup chopped onions
- 1 tsp ginger garlic paste
- 3/4 cup chopped tomatoes
- 1 chopped green chilli
- 1/2 tsp red chilli powder
- 1 tsp garam masala
- 12 cashews
- 1 pinch turmeric
- Salt to taste
- 1/2 cup Chopped coriander
- 1/2 tsp cumin
- 1 Bay Leaf
- 3 Cloves
- 2 cardamoms
- 1 cinnamon stick

Instructions
- Pierce the boiled eggs with a fork so that the flavours sink in.
- In a mortar and pestle crush the cashews to a powder and soak sometime in water.
- Make a paste of the cashews by blending the water and cashews together.
- Heat oil in a medium pan and add cumin.
- Once the cumin aroma can be felt add the bay lead, cardamom and cinnamon stick.
- When the spices start to splutter, add onions and salt.
- Keep cooking and stirring till the onions caramelise.
- Add ginger garlic paste and saute it with the onions.
- To this, add the tomatoes and once they cook add chili powder, turmeric and garam masala.
- Stir it in and let masala leave its aroma.
- Add the cashew paste, mix and let the gravy simmer.
- Put the eggs in once the gravy is cooked along with coriander and cook for two minutes.
- Add water to adjust consistency and simmer the egg curry till the gravy is thickens.
