Thai Beef Massaman Curry

Ingredients
- 85 grams unsalted peanuts
- 400 ml coconut cream
- 4 tbsp massaman curry paste
- 600 grams beef steak chopped
- 450 grams potatoes chopped
- 1 onion sliced
- 4 kaffir limes
- 1 cinnamon stick
- 1 tbsp tamarind paste
- 1 tbsp brown sugar
- 1 tbsp fish sauce
- 1 red chili deseeded and sliced

Instructions
- Preheat the oven to 200C and roast the peanuts on a baking tray for five minutes until they become golden brown.
- Chop the peanuts.
- Lower the oven temperature to 180C.
- Take two tablespoons of the coconut cream and heat it.
- Add the curry paste and sauté for a minute.
- Add the beef and sauté until it is coated with the paste.
- Pour in half a cup of water and add the remaining coconut cream.
- Stir well.
- Add the potatoes, onions, lime leaves, cinnamon, tamarind, sugar and fish sauce and allow the curry to begin to simmer.
- Stir well.
- Cover the curry and cook it in the oven for two hours.
- Remove the curry from the oven, sprinkle it with spiced chili and peanuts.
