The Khantoke is a pedestal tray that is used as a dining table, with rice in the center and the dishes spread around it. It’s a meal that is enjoyed by the Lanna people of northern Thailand. And now, The Park has brought that way of eating to Chennai. We met with Executive Chef Ashutosh Nerlekar to better understand the Khantoke Festival at Lotus. “It’s usually done at the end of the year – October or November. But we launched our new menu a few months ago and we wanted to do something new, which combines everything together. It’s a customised buffet, and it’s a melange of ingredients and flavours. It comes in vegetarian and non-vegetarian.”

We, as Indians, love our Chinese food. It’s a known fact that we even have our own version of Chinese food that is nothing like that of what is made in China. But what we also love very much is other Pan-Asian cuisines. One of the few cuisines that are doing really well in India is Thai food. It has a lot in common with Indian food in terms of spices, the mixture of hot and sweet food and the aromas are also very similar to what we make in our kitchens here. Despite the fact that most people have never eaten Thai food in India or around the world, it is still one of the most popular cuisines in the country. CNN Travel even listed seven of Thailand’s popular dishes in the “World’s 50 Most Delicious Foods” after a worldwide online poll was conducted.
Intrigued by that name? The Thai Drunken noodles, also locally known as pad kee mao or phat khi mao (khi mai means drunkard, in Thai) has a few legends to it’s name (literally). One theory states that the noodles are “drunk” because of the use of rice wine in the traditional recipe, while another claims that the drunken noodles was a meal made by someone who came home drunk and made something to eat with available ingredients, and yet another says that the ‘drunken’ is because of all the alcohol you’ll need to counter the spicy noodles. Well, whichever is true, it sure does put an interesting tag to the dish!
Authentic Thai cuisine chefs are also concerned about how it looks, how it smells, and how it fits in with the rest of the meal. They think of all parts of the meal as a whole – sum rap Thai (the way Thais eat), is the term used for the unique components that make up a characteristically Thai meal.
