Enid Blyton Strawberry Jam Recipe
This is the best season to try out this marvellous recipe. Jams are one of the quinnessential British foods and is mentioned many a time in Enid Blyton’s book. One time, she penned down a tempting description of a blackcurrant tea made using blackcurrant jam.

- 2 pounds fresh strawberries
- 4 cups sugar
- 1/4 cup Lemon juice

Instructions
- Crush strawberries in a big bowl and put it in a saucepan along with the sugar and lemon juice.
- Place the saucepan on a low flame and heat till the sugar is dissolved.
- Then put the flame on high heat and bring the jam to a boil.
- Keep boiling while stirring frequentlytill the temperature reaches 220 .
- Turn off the gas and transfer the hot jam into sterile jars leaving 1/2 inch space between the jam and the lid.
- Place the tightly shut jars into a water bath and process for about ten minutes.
- Refrigerate once cool and enjoy.
